Picking wild greens or "horta"

It's winter time here in Athens and most of Attiki Gaea is hibernating. A few sprigs of herbal tea (sideritis) have remained and most of our fruit tree have shed their leaves sans the evergreen olive and cypress trees. But the amazing produce that this fertile land produces all year round is "horta" or wild greens; in other words: weeds. If you ever hit a Greek restaurant, a salad dish would be "horta". So Attiki Gaea is full of them all year round and horta are much appreciated in our table.

horta or "weeds" such as wild chicory, dandelion leaves and more boiled in salt water and served with pure cold=pressed olive oil and lemon.
